There would have been a 'satisfying' resolution to the UST that permeated the season, but there would have been just too much conflict there, I think.
Not to mention (and after even more discussion with Sandy), it is very hard not to have sex and keep having sex with someone without a sense of intimacy and yes, even love, before you know it. I've actually experienced it myself--it just kind of creeps up on you and wiggles it's way in, without having any intentions of actually doing so. :)
